Prepare glass and ingredients

Chill a highball or Collins glass by filling it with ice and letting it sit while you prepare the other components. Measure out the Talisker, fresh lime juice, and simple syrup. Have your ginger beer and bitters at hand.

Build the drink

Discard the ice used to chill the glass, then fill the glass about halfway with fresh cubed ice (roughly 1 cup). Pour in 2 oz Talisker, 0.75 oz fresh lime juice, and 0.5 oz simple syrup directly over the ice.

Top and finish

Add 3 oz chilled ginger beer to top the drink. Add 2 dashes of Angostura bitters on top. Gently stir 6–8 slow revolutions with a bar spoon to combine the spirit, citrus, syrup and ginger beer without flattening the carbonation.

Garnish and serve

Garnish with a lime wheel or wedge on the rim and, if desired, a piece of candied or crystallized ginger speared on a pick. Serve immediately with a straw optional.
