Prepare and combine
Chill a rocks or coupe glass by filling with ice and water; set aside. In a cocktail shaker, add Pampero Selección (2 oz), orange curaçao (1/2 oz), fresh lime juice (3/4 oz), simple syrup (1/4 oz), and 2 dashes of Angostura bitters. If using egg white for a silkier texture, add 1/2 oz egg white now.
Dry shake (if using egg white)
If you added egg white, seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify and create foam.
Shake with ice
Add a good handful of ice to the shaker. Shake hard for 12–15 seconds until the outside of the shaker is cold and condensation forms.
Prepare glass and strain
Discard ice/water from the chilled serving glass. If serving over ice, add 2–3 large fresh ice cubes to the glass. Double-strain the cocktail into the prepared glass using a Hawthorne and fine mesh strainer (or single strainer if not available) to remove small ice chips and, if used, egg-white solids.
Garnish & Finish
Express an orange twist (or lime twist) over the drink to release oils, run it around the rim and drop it into the glass, or float a lime wheel on top. Finish with a light grating of nutmeg (or a couple more drops of bitters) if desired.
