Prepare glass

Chill a coupe or old-fashioned glass by filling it with ice and cold water while you prepare the cocktail, or place it in the freezer for 5–10 minutes.

Dry shake (if using egg white)

If using egg white for a silky foam, add the white to a cocktail shaker with the white rum, fresh lime juice, simple syrup, and Cointreau. Seal and shake vigorously without ice for 10–15 seconds to emulsify and build foam.

Wet shake

Add ice to the shaker (about 4 large cubes). Seal and shake vigorously for 12–15 seconds until the shaker is cold to the touch and well chilled.

Strain and serve

Discard ice and water from the chilled glass. Double-strain the cocktail into the prepared glass over fresh serving ice (or without ice if you prefer it straight up), using a Hawthorne strainer and a fine mesh strainer to catch any small ice shards and egg white solids.

Garnish & Finish

Express a lime twist over the top of the drink to release oils, then rub the rim with the peel and drop a lime wheel or wedge onto the glass. Optionally grate a little lime zest over the foam for aroma.

Serve immediately. Recommend serving with a short tasting note: bright, citrus-driven rum cocktail with a silky texture and light orange-liqueur sweetness.
