Prepare glass

Chill a coupe or nick & nora glass by filling it with ice and cold water while you prepare the cocktail, or place it in the freezer for a few minutes.

Dry shake (if using egg white)

If using the egg white, add 0.5 egg white, 2 oz Pampero Aniversario rum, 0.75 oz fresh lime juice, 0.5 oz simple syrup, 0.25 oz orange curaçao, and 2 dashes Angostura bitters to a cocktail shaker WITHOUT ice. Seal and shake vigorously for 15–20 seconds to emulsify and build a silky texture.

Wet shake

Open the shaker, add 4 ice cubes, reseal and shake vigorously for another 10–15 seconds until well chilled (outside of shaker becomes cold and slightly frosty). If not using egg white, combine all liquid ingredients and bitters with ice and shake vigorously for 12–15 seconds.

Strain and serve

Dump the ice and water from the chilled glass. Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the chilled coupe to remove ice shards and any egg white solids, producing a smooth silky top.

Garnish

Express an orange twist over the drink to release oils, rub the rim lightly and drop it in, or float a lime wheel on the surface. Optionally grate a small amount of nutmeg or sprinkle a little orange zest on top for aromatic finish.

If you like a spiced aroma, grate a pinch of fresh nutmeg over the foam or garnish with additional orange zest to taste.
