Warm the dairy
In a medium saucepan, combine the whole milk and heavy cream. Warm over medium-low heat until small bubbles form at the edges and the mixture is steaming but not boiling (about 5–7 minutes). Stir occasionally to prevent a skin from forming.
Add sugar
Whisk in the granulated sugar until fully dissolved into the warm milk mixture (about 30 seconds).
Melt the chocolate
Lower the heat to low. Add the chopped dark chocolate to the warm dairy in small handfuls, stirring constantly with a heatproof spatula or whisk. Continue stirring until the chocolate is completely melted and the mixture is smooth and glossy (2–3 minutes). Keep temperature low to avoid seizing.

Add the ground cinnamon, ground cardamom, ground ginger, and ground cloves to the chocolate mixture. Whisk thoroughly to incorporate. Let the mixture simmer gently on very low heat for 3–4 minutes to allow the spices to bloom and infuse their flavors into the hot chocolate, stirring frequently so nothing sticks.
Finish with vanilla and salt
Remove the saucepan from the heat. Stir in the vanilla extract and fine sea salt. Taste and adjust seasoning — add maple syrup or honey at this stage if you want a sweeter drink (start with the listed tablespoon, then add more to taste).
Serve & Garnish
Strain (optional): For an ultra-smooth cup, pour the hot chocolate through a fine-mesh sieve into a heatproof pitcher or directly into cups to catch any undissolved spice bits.
