Method
Prepare Patties
Mix
In a medium bowl combine ground beef, breadcrumbs, egg yolk, Worcestershire sauce, kosher salt, black pepper, and smoked paprika if using. Mix gently with your hands or a fork until just combined—avoid overworking to keep patties tender.
Form
Divide mixture into four equal portions (about 2 oz / 55 g each). Lightly shape each portion into a flat patty slightly larger than the mini buns (patties will shrink while cooking). Press a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Cook Patties
Heat a large skillet or griddle over medium-high heat until hot. Add vegetable oil and swirl to coat. Place patties in the skillet leaving small gaps between them. Cook without moving for 2 to 3 minutes until a brown crust forms.
Flip patties and immediately top each with a slice of cheddar. Reduce heat to medium and cook another 1.5 to 2 minutes, or until internal temperature reaches 160°F (71°C) and cheese is melted. Remove patties to a plate and tent loosely with foil to keep warm.
Prepare Buns & Toppings
Halve the mini buns. Spread softened butter on the cut sides. Optionally sprinkle sesame seeds on the bun tops. Heat a clean skillet over medium and toast buttered cut sides until golden, about 30–60 seconds. Remove and keep warm.
Thinly slice the red onion into rings and separate. In a small bowl, mix mayonnaise and mustard to make a simple spread. Place a small lettuce leaf on the bottom half of each toasted bun.
Assemble & Serve
Spread about 1/2 tablespoon of the mayo-mustard mixture on each top bun. On each bottom bun (already with lettuce), place one cheeseburger patty, 2 pickle slices, a few rings of red onion, and then the top bun.
Serve immediately while warm. Makes 4 mini burgers.
