Prepare glass

Chill a coupe or martini glass in the freezer for at least 10 minutes or fill with ice water while you mix the drink.

If using egg white: dry shake the egg white alone first. Add the 0.5 oz egg white to a cocktail shaker and shake vigorously without ice for 10–15 seconds to build foam.

Build the cocktail: to the shaker add 2 oz vodka, 0.5 oz dry vermouth, 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 0.25 oz blue curaçao. If you performed the dry shake with egg white, add those dry-shaken egg white contents to the shaker now (if not using egg white, skip).

Add ice: fill the shaker halfway with fresh ice (approximately 4–6 medium cubes).

Wet shake: shake vigorously for 12–18 seconds until the shaker is well chilled and, if using egg white, the foam is thick and silky.

Double strain: empty the ice from your chilled glass. Strain the cocktail through a fine-mesh strainer into the chilled coupe or martini glass to remove ice shards and ensure a smooth texture.

Garnish

Express the oils from the lemon twist over the surface of the drink by holding the twist over the glass, skin side down, and giving it a quick squeeze, then rub the rim with the twist and drop it into the drink.

Optional presentation: place a dehydrated lemon wheel on the surface or dust a tiny pinch of powdered sugar like 'snow' for a Finland-inspired look.
