Cocktail

Honey-Ginger Syrup (makes ~6 oz)

Method

Honey-Ginger Syrup (make first or ahead)

1

Combine honey and hot water in a heatproof container and stir until the honey dissolves fully.

2

Add sliced fresh ginger to the honey mixture and let steep for at least 20 minutes for a pronounced ginger note. For stronger ginger, steep 1 hour.

3

Strain out the ginger slices with a fine mesh strainer. Cool the syrup to room temperature, then refrigerate. Keeps up to 2 weeks.

Cocktail Construction

4

Prepare and chill glass

If desired, chill a coupe or Nick & Nora glass in the freezer or fill with ice water while you mix the drink.

5

Add 2 oz Eminente Ámbar Claro rum, 0.75 oz fresh lime juice, 0.5 oz honey-ginger syrup, 0.25 oz Aperol (or light amaro), 0.25 oz orange liqueur, and 2 dashes Angostura bitters into a cocktail shaker.

6

Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the exterior of the shaker is well chilled and slightly frosty.

7

Discard ice from the chilled glass, then double-strain the mixture into the chilled coupe or Nick & Nora glass using a Hawthorne strainer and fine mesh strainer to remove small ice shards and any syrup solids.

8

Garnish with a thin lime wheel floated on the surface and a piece of candied ginger (or a thin fresh ginger slice) on the rim or skewer.

9

Serve immediately.
