Preheat and dose

Turn the espresso machine on and allow it to fully heat (20–30 minutes for most machines). Warm an espresso cup on the cup tray or with hot water and empty it before brewing. Place the portafilter on the scale and tare it.

Weigh and grind

Weigh 18 g of fresh whole specialty coffee beans. Grind to an espresso fine setting (aim for feel similar to table salt or slightly finer depending on your grinder). Adjust grind to target extraction time as described below.

Distribute, tamp, and lock in

Add the ground coffee into the double basket in the portafilter. Distribute grounds evenly (tap or use a distribution tool), then tamp firmly and level with about 30 pounds (13–15 kg) of pressure. Wipe any loose grounds from the rim and lock the portafilter into the group head.

Pull the shot

Place the pre-warmed cup under the spouts and start the shot while simultaneously starting the timer. Aim for 36–40 seconds total time from first drip to yield 36–40 ml of liquid (this is a typical 1:2 brew ratio for double espresso: 18 g dose -> 36–40 ml yield). If extraction finishes much faster (<25 s) or much slower (>45 s), adjust grind finer or coarser respectively and repeat.

Evaluate and serve

Observe the shot: it should start with a short thin blonde stream, develop into a steady chocolate-colored flow, and finish with a slightly lighter tip. The crema should be golden-brown and persistent. Serve immediately in the warmed cup. For variations (long black, milk drinks) use freshly brewed double espresso as the base.

Cleaning & Notes

Purge a short burst of water through the group head after pulling the shot to clear grounds and maintain temperature. Knock out the used puck, rinse the portafilter, and wipe the group head. Store beans in a cool, dark place and use within 2–3 weeks of roast for best results.
