Method
Base (prepare rusks)
Place the barley rusks in a single layer on a serving platter or four individual plates.
Lightly brush or drizzle each rusk with about 1/2 tablespoon of extra virgin olive oil (total 2 tbs) so they soak a little oil and become more tender and flavorful.
Pour the lukewarm water into a shallow bowl. Briefly dip each oiled rusk into the water for 1–2 seconds per side — just enough to soften the rusk but not to make it soggy. Return to the platter.
Sprinkle the 1 tsp sea salt evenly over the soaked rusks to season the base.
Tomato topping (prepare and season)
Core and coarsely grate or dice the tomatoes into a bowl. If tomatoes are very juicy, drain off a little of the excess liquid so the topping isn't watery (reserve juice for another use). You should have about 3 cups.
Add 1 tsp sea salt, 1 tsp black pepper and 1 tsp dried oregano to the grated tomatoes. Mix gently and taste; adjust seasoning if needed. Let sit 5 minutes so flavors marry.
Assemble & finish
Spoon a generous mound of the seasoned tomato mixture evenly over each softened rusk, pressing lightly so the tomato adheres.
Crumble the feta cheese into medium-sized pieces and scatter over the tomatoes on each rusk. Aim for roughly 50 g (about 1/4 of the block) of feta per 2 rusks (adjust by taste).
Scatter the halved Kalamata olives and drained capers evenly across the dakos.
Drizzle the finishing 3 tablespoons extra virgin olive oil evenly over all assembled dakos. If using, drizzle the 1 tsp fresh lemon juice lightly over the top for brightness.
Garnish with torn basil leaves (or flat-leaf parsley). Let the assembled dakos rest 2–3 minutes to meld, then serve immediately so the rusks retain a slightly crisp edge while softened inside.
