Combine ingredients

Add 2 oz Bacardí 8 Años, 0.25 oz simple syrup, 0.5 oz fresh lime juice and 2 dashes Angostura bitters into a mixing glass or cocktail shaker filled halfway with ice.

Stir for dilution

Stir the mixture briskly with a bar spoon for about 20–30 seconds (roughly 15–20 full spins) until well chilled and lightly diluted. If you prefer a slightly brighter citrus note, shorten to 15–20 seconds; for more smoothing dilution, stir 30–40 seconds.

Finish & serve

Prepare glass

Place a large ice cube or sphere into a chilled old fashioned glass.

Strain

Double-strain (or fine-strain) the chilled mixture from the mixing glass into the prepared glass over the large ice cube.

Garnish and aromatic finish

Hold the orange peel with the outside facing down over the glass and give it a firm twist to release the oils, then rub the peel's rim on the glass and drop it into the drink. Optionally add one more small dash of Angostura on top for aroma.

Serve immediately with a short spoon or cocktail pick. Advise the drinker to sip and enjoy the rum's aged, caramel and spice notes balanced by a touch of citrus and bitters.
