Prepare the Green Tomatoes

Slice the green tomatoes into 1/4 inch thick rounds. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.

Set Up the Breading Station

In one bowl, add the buttermilk. In a second bowl, mix the flour, cornmeal, cayenne pepper, black pepper, and additional salt together.

Bread the Tomatoes

Dip each tomato slice in the buttermilk, then dredge in the flour-cornmeal mixture, coating both sides. Shake off excess flour.

Fry the Tomatoes

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded tomatoes in batches, frying until golden brown (about 3-4 minutes per side). Drain on paper towels.

Make the Red Pepper Aioli

In a bowl, combine mayonnaise, roasted red peppers, minced garlic, lemon juice, salt, and pepper. Mix well until smooth.
