Prepare the Orzo

Cook the parsley orzo according to package instructions. Drain and set aside.

Cook the Pork Belly

In a skillet over medium heat, cook the crispy pork belly until heated through and crispy. Remove from the skillet and chop into small pieces.

Sear the Scallops

In the same skillet, add olive oil and heat over high heat. Season the sea scallops with salt and black pepper. Once the oil is shimmering, add the scallops to the skillet and sear for about 2-3 minutes on each side until golden brown and cooked through.

Plate the Dish

On a serving plate, create a bed of parsley orzo. Top with seared scallops, sprinkle with crispy pork belly, and garnish with fresh Thai basil and lemon zest.
