Soak the Chilies

Remove the stems and seeds from the dried chilies. Soak them in hot water for about 15 minutes until softened.

Blend the Marinade

In a blender, combine the soaked chilies (drained), garlic cloves, pineapple juice, cumin, oregano, paprika, salt, black pepper, and white vinegar. Blend until smooth.

Marinate the Pork

Cut the pork shoulder into small chunks and place it in a large bowl. Pour the marinade over the pork, ensuring all pieces are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Grill the Pork

Preheat your grill to medium-high heat. Remove the pork from the marinade and grill for about 10-12 minutes per side, or until the pork is cooked through and has a nice char.

Let it Rest

Once cooked, remove the pork from the grill and let it rest for 5-10 minutes before slicing it thinly.

Assembling the Tacos

Warm the Tortillas

Heat the corn tortillas on the grill or a skillet for about 30 seconds on each side until warm and pliable.

Assemble the Tacos

On each tortilla, add a portion of the grilled pork, top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges on the side.
