Prepare claws

If claws are fully cooked and chilled, rinse and pat dry. Using kitchen shears or a crab cracker, lightly crack the shell along the median so diners can access meat; keep shells mostly intact for presentation.

Warm butter and season

In a small skillet over low heat, melt unsalted butter until foamy but not browned (about 1–2 minutes). Add sea salt and freshly ground black pepper, stir to combine. Remove from heat and squeeze lemon half into the butter, stirring. Reserve the other half of the lemon for serving.

Finish claws

Briefly (30–45 seconds) submerge each cracked claw in warm butter to lightly warm the meat without fully reheating — stone crab is traditionally served cold or slightly chilled. Transfer claws to a platter lined with ice if you prefer chilled presentation. Sprinkle chopped chives over claws and drizzle a teaspoon of olive oil and a light dusting of smoked paprika (optional). Serve with lemon wedges.

Grill fruits and vegetables

Preheat a grill or grill pan to medium-high. Lightly oil the tomato halves, red bell pepper quarters, and strawberries. Grill tomatoes and bell pepper, flesh-side down, until charred and softened, 3–5 minutes. Grill strawberries 1–2 minutes per side until they caramelize slightly. Remove and let cool to room temperature.

Blend gazpacho

In a blender, combine grilled tomatoes, grilled strawberries, grilled red pepper, chopped cucumber, and peeled shallot. Add grated ginger, sherry vinegar, 2 tablespoons of olive oil, coarse salt, and black pepper. Add 4 ice cubes. Puree until smooth but still slightly textured (about 30–45 seconds). Taste and adjust seasoning and acidity — add remaining 1 tablespoon olive oil if you want more silkiness.

Chill and rest

Transfer gazpacho to the refrigerator for at least 30 minutes to let flavors meld and cool thoroughly. If too thick, thin with 1–2 tablespoons cold water until desired consistency is reached.

Rhubarb Garnish & Pickle

Quick-pickle rhubarb

Combine rice vinegar, water, and granulated sugar in a small bowl or jar and stir until sugar dissolves. Add a pinch of salt. Add the thinly sliced rhubarb, pressing down so slices are submerged. Let sit at room temperature for 10–15 minutes to lightly pickle and soften; refrigerate if preparing ahead. Drain before plating, reserving 1 teaspoon of pickling liquid for finishing if desired.

Assembly & Serve

Spoon chilled grilled strawberry gazpacho into shallow bowls or small tasting glasses (about 3–4 tablespoons per serving as a starter).

Place 2 stone crab claws per serving on top or alongside the gazpacho. Drizzle a little of the warmed lemon butter over the exposed crab meat (about 1/2 teaspoon per claw).

Arrange a few pickled rhubarb slices over the crab or at the rim for bright acidity and contrast. Scatter micro basil or small basil leaves and a few chive pieces over the dish.

Finish with a tiny drizzle of olive oil (a few drops) and an optional sprinkle of smoked paprika for color. Serve immediately with lemon wedges and extra chilled gazpacho on the side if desired.
