Method
Crispy Roasted Cauliflower
Preheat
Preheat your oven to 425°F (220°C). Position a rack in the center. Line a large rimmed baking sheet with parchment paper or a silicone mat for easier cleanup.
Prepare cauliflower
Trim and cut the cauliflower head into medium florets (about 1 to 1.5 inches). Pat the florets dry with a towel to remove surface moisture — this helps them crisp.
Coat
In a large mixing bowl, toss the florets with 1 tablespoon of the neutral oil until lightly coated. Sprinkle the cornstarch, garlic powder, onion powder, kosher salt, and black pepper over the florets and toss thoroughly so each piece is evenly dusted with cornstarch and seasonings.
Arrange and roast
Spread the florets in a single layer on the prepared baking sheet with space between pieces (crowding prevents crisping). Drizzle the remaining 2 tablespoons of oil evenly over the florets or lightly brush them. Roast in the preheated oven for 22–28 minutes, turning once halfway through, until edges are golden brown and florets are crisp-tender.
Gochujang Glaze
While the cauliflower roasts, make the glaze. In a small bowl or small saucepan, whisk together gochujang, honey (or maple syrup), rice vinegar, soy sauce, sesame oil, grated ginger, and 2 teaspoons water. Taste and adjust: add another teaspoon of water if too thick, or an extra 1/2 teaspoon honey if you want it sweeter.
If you prefer a slightly looser, warmed glaze that will adhere better, gently heat the mixture over low heat for 1–2 minutes, whisking constantly until glossy. Remove from heat and keep warm.
Finish & Serve (Gorgonzola & Garnish)
When the cauliflower is done roasting, remove the tray from the oven. Working quickly, transfer the hot florets to a large bowl and pour about three-quarters of the prepared gochujang glaze over them (reserve some for drizzling). Toss gently to coat each floret evenly. Taste one piece and add more glaze if you like it spicier or saucier.
Arrange the glazed cauliflower on a warm serving platter. Sprinkle the crumbled Gorgonzola evenly over the hot florets so it softens slightly from the residual heat. Scatter the sliced chives and toasted sesame seeds on top. Finish with a light dusting of lemon zest if using — it brightens the rich, spicy flavors.
Serve warm: this dish is best eaten immediately while the cauliflower is crisp and the cheese is slightly melty. Provide extra glaze at the table for those who want more heat.
