Chill Champagne and Glasses
Place the Champagne bottle in an ice bucket with 2 cups of ice and enough cold water to cover about two-thirds of the bottle. Chill for 15–20 minutes until well chilled (around 45°F / 7°C). Alternatively, refrigerate for several hours in advance.
Prepare Glasses
While the bottle chills, chill your champagne flutes in the refrigerator or in the ice bucket for 5–10 minutes. Dry the rims with a clean, lint-free cloth just before serving to avoid water droplets.

Prepare Blini/Bread Bases
If using blini, warm them in a skillet over very low heat for 30–60 seconds per side until just warm. If using toasted brioche rounds, toast lightly until just golden. Allow to cool slightly.
Make a Simple Crème Base
Spread about 1 teaspoon of softened unsalted butter on each blini or brioche round. Top the butter with about 1 teaspoon of crème fraîche. This provides a rich, neutral bed that lets the caviar shine.
Assemble Caviar Bumps
Using a mother-of-pearl spoon or a small non-metal spoon (to avoid metallic taste), place roughly 1/4 to 1/2 teaspoon of caviar onto each crème-topped blini. Aim for 12 pieces total so each guest can have several. Sprinkle a very small pinch of finely minced shallot and a few snipped chives over each bump for brightness. Finish each with a tiny lemon zest thread and an almost imperceptible pinch of fleur de sel. Do not over-salt; caviar is naturally briny.
Optional Seasoning
If you like, add a light grind of black pepper to one or two test bites to see how pepper interacts with your caviar. Keep most bumps unpeppered so the Champagne pairs cleanly.
Plate and Serve
Arrange the assembled caviar bumps on a chilled serving plate. Place lemon wedges on the side and keep leftover caviar chilled on ice until serving. Present the bowl of Champagne and flutes; pour 2–3 ounces (60–90 ml) of Champagne per flute, pouring gently down the side of the glass to preserve bubbles. Serve each guest a few caviar bumps alongside their Champagne.
