Peel the bananas and slice them on a sharp diagonal into 1/4-inch (6 mm) thick slices. Immediately toss the slices with the 1 tablespoon lemon juice to prevent browning and set aside.

Heat a medium nonstick skillet over medium heat. Add 1 tablespoon unsalted butter. When butter foams, add 2 tablespoons light brown sugar and stir until dissolved and bubbling lightly (about 30–45 seconds).

Arrange banana slices in a single layer in the skillet. Cook without moving for 1 minute to get a light caramel crust, then gently flip and cook another 30–45 seconds until both sides are golden and glazed. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of sea salt. Transfer bananas to a plate to cool slightly.

Place 2 tablespoons of caviar in a small chilled bowl. Drizzle 1 teaspoon extra-virgin olive oil over it and fold gently to coat — do not break the eggs. Add 1 teaspoon finely chopped chives and a small pinch of freshly cracked black pepper; gently combine. Keep chilled until assembly.
