    Preheat and prepare

    Preheat the oven to 350°F (175°C). Lightly grease a 7 oz ramekin or oven-safe cup with neutral oil or melted butter (1 tbs). If you want a sugared rim, dip the greased rim into granulated sugar (1 tsp) and set the cup on a baking sheet.

    Combine dry ingredients

    In a medium bowl, whisk together 3 cups all-purpose flour, 1 cup granulated sugar, 1 tablespoon baking powder, and 1 teaspoon fine salt until evenly distributed.

    Combine wet ingredients

    In a separate bowl or large measuring cup, whisk 2 eggs with 1 3/4 cups whole milk, 6 tablespoons melted and cooled butter, and 2 teaspoons vanilla extract until smooth.

    Mix batter

    Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined and no large streaks of flour remain. The batter should be thick but pourable; if it seems too stiff, add up to 2 tablespoons warm water, 1 tablespoon at a time, until it reaches a consistency that will easily pour into the cup but will not be runny.

    Portion into cup

    Spoon or pour the batter into the prepared 7 oz ramekin or cup, filling it about 2/3 to 3/4 full (this will be roughly 5–6 oz of batter depending on density). Smooth the top lightly with a spatula.

    Bake

    Place the filled cup on a baking sheet and bake in the preheated oven for 20–28 minutes, until the top is golden and a skewer inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the final 5–8 minutes.

    Cool

    Remove from oven and let the cup cool on a rack for 10–15 minutes. Cooling stabilizes the crumb and makes it easier to add fillings or toppings without sinking.

Fillings & Finish

    Add filling

    After the baked cup has cooled slightly (5–10 minutes), spoon about 3/4 cup of fresh berries or warm fruit compote into the center. If your baked cup domed significantly, use a small spoon to remove a little crumb to create a shallow well for the filling.

    Add 1/2 cup whipped cream or plain yogurt on top of the filling. For a cleaner presentation, pipe or dollop the topping in the center.

    Dust with 1 teaspoon powdered sugar if desired. Serve warm or at room temperature. The single 7 oz cup serves 1 person.
