Marinated Chicken
Prepare and marinate
If chicken breasts are thick, butterfly or pound to an even 1/2–3/4 inch thickness. Pat dry. In a bowl, whisk together 1 cup yogurt, 2 tbsp lemon juice, 1 tbsp olive oil, minced garlic, grated ginger, cumin, coriander, turmeric, garam masala, paprika, 1 tsp salt, 1 tsp black pepper and 1/4 tsp red chili/cayenne (if using). Add chicken, coat thoroughly, cover, and refrigerate for at least 30 minutes and up to 4 hours (longer will deepen flavor).
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on it (optional for even air circulation). Remove chicken from marinade, letting excess drip off. Reserve any leftover marinade for serving only if you boil it for 5 minutes — otherwise discard.
Bake chicken on the rack or directly on the foil-lined sheet for 12–18 minutes depending on thickness, until internal temperature reaches 165°F (74°C). For slightly charred edges, switch to broil for the last 1–2 minutes while watching closely. Remove, tent with foil and rest 5 minutes, then slice into 1/2-inch strips or bite-sized pieces.
Mint-Yogurt Dressing
Blend dressing
In a blender or food processor combine 1/2 cup yogurt, packed mint leaves, 1 tbsp lemon juice, 1 tbsp olive oil, 1/2 tsp honey (if using), 1/2 tsp salt, 1/4 tsp black pepper and 1 tsp water. Pulse or blend until smooth. Taste and adjust seasoning — add more salt, lemon, or a teaspoon of water to reach a pourable consistency. Chill until ready to toss.
Salad Assembly
In a large bowl, combine 6 cups mixed salad greens, halved cherry tomatoes, cucumber slices, thinly sliced red onion, halved grapes and toasted walnuts.
Add about two-thirds of the mint-yogurt dressing to the greens and gently toss to coat evenly. Reserve remaining dressing for serving or for guests to add more.
Arrange dressed greens on a large platter or divide onto 4 plates. Top with sliced warm chicken pieces distributed evenly.
Notes & Serving
This recipe serves 4 as a main dish (or 2–3 as a hearty entrée). Leftover chicken keeps 2 days refrigerated. If you marinated chicken longer than 4 hours, monitor texture—acidic marinades can change it. For a smokier flavor, grill chicken on medium-high heat 6–8 minutes per side instead of baking.
