Make dough

In a large bowl, whisk together 3 cups flour, 1 tablespoon sugar, 2 teaspoons instant yeast and 1 teaspoon salt. In a small bowl, combine 3 tablespoons warm milk and 1 large beaten egg; add to dry ingredients and mix until a shaggy dough forms. Add 4 tablespoons softened butter and knead (by hand or mixer with dough hook) 5–7 minutes until smooth and elastic. If dough is sticky, add up to 2 tablespoons flour. Shape into a disk.

First chill

Wrap dough disk in plastic and refrigerate 30 minutes while preparing butter block.

Prepare butter block

Place 10 tablespoons cold butter between two sheets of parchment and bash/roll with a rolling pin to form a 6x6-inch square about 1/4 inch thick. Keep chilled if it softens.

Laminate (single turn + fold)

On a lightly floured surface, roll chilled dough to a 9x9-inch square. Place butter block centered on dough at a 45° angle (diamond). Fold corners of dough over butter to fully encase. Seal seams and gently roll to a 10x8-inch rectangle, keeping edges even. Fold into thirds like a letter (one short edge to center, then the other over it). Rotate 90°, wrap in plastic and chill 30 minutes. Repeat rolling to 10x8 inches and fold into thirds once more, then chill another 30 minutes. This creates flaky layers; avoid overworking so butter stays cold.

Shape danishes

After final chill, roll dough to about 12x10 inches and cut into eight roughly equal rectangles. Place rectangles on a parchment-lined baking sheet. Using a sharp knife, score a 1/2-inch border around each rectangle without cutting through. Fold the outer 1/2-inch edges slightly upward to form a shallow well for filling.

Proof

Cover loosely with lightly greased plastic or a kitchen towel and let rise at room temperature 45–60 minutes until puffy but not doubled.

Lemon Cream Cheese Filling

Prepare filling

In a bowl, beat 8 ounces softened cream cheese with 1 tablespoon powdered sugar, 2 teaspoons lemon juice, 1 teaspoon lemon zest and 1 teaspoon vanilla until smooth and spreadable. If too thick, add up to 1 teaspoon milk. Spoon or pipe about 2 tablespoons of filling into the center well of each proofed pastry, keeping filling inside the scored border.

Prepare berries

In a small saucepan, combine 1 cup mixed berries, 1 teaspoon sugar, 1 teaspoon cornstarch and 1 tablespoon water. Cook over medium heat, stirring gently, until berries release juices and glaze thickens, about 2–3 minutes. Remove from heat and let cool slightly.

Top danishes

Using a spoon, place a small mound (about 1–2 tablespoons) of the glazed berries on top of the lemon cream cheese in each pastry, leaving some cheese visible.

Egg Wash & Finish

Egg wash

Whisk 1 egg with 1 teaspoon water. Gently brush exposed pastry edges with egg wash, avoiding the filling to prevent burning.

Bake

Preheat oven to 400°F (200°C). Bake danishes on the center rack for 14–18 minutes, rotating sheet halfway, until golden brown and puffed. If edges brown too quickly, tent loosely with foil for the last few minutes.

Glaze and serve

Remove baked danishes to a wire rack. Mix 2 teaspoons powdered sugar with 1 teaspoon milk to a drizzleable consistency and lightly drizzle over cooled or warm pastries. Serve warm or at room temperature.
