Prep bread and oven

Preheat the oven to 425°F (220°C) and position a rack in the upper third so the cheese will brown but not burn. Line a baking sheet with foil or parchment.

Spread 1 tablespoon softened butter evenly on each slice of bread. Sprinkle each slice with 1/2 teaspoon garlic powder divided between them and a light dusting of black pepper.

Pile the grated sharp cheddar evenly across the two buttered slices, pressing lightly so the cheese adheres but still forms an even layer (about 3/4 to 1 cup cheese per slice).

Place the prepared slices on the lined baking sheet and bake for 6–8 minutes until the cheese is melted and starting to bubble. For a deeper brown and slight crisp at the edges, switch to the broil setting for 1–2 minutes—watch closely to avoid burning.

Remove from oven and let the toasts rest on the baking sheet for 1 minute to set.

Hot Honey

While the oven heats or the cheese melts, make the hot honey. In a small saucepan or microwave-safe bowl, combine 4 tablespoons honey, 1 tablespoon water, and 1 teaspoon red pepper flakes.

Over low heat on the stovetop, warm the mixture gently, stirring, until the honey thins and the pepper flakes infuse the honey—about 2–3 minutes. Do not boil. (If using microwave, heat in 20-second bursts, stirring between, until warm.)

Remove from heat and stir in 1/2 teaspoon apple cider vinegar and 1/8 teaspoon fine sea salt to brighten and balance the sweetness. Taste and adjust: add a pinch more red pepper flakes for heat or a dash more vinegar for tang. Keep warm until ready to use.

Finish & Serve

Drizzle: Place the baked cheddar toasts on a serving plate. Spoon the warm hot honey evenly over both slices—about 2 tablespoons per slice, or to taste—so it glazes the cheese.

Garnish: Scatter the thinly sliced chives over the toasts and, if using, grate a little lemon zest on top to cut through the richness.

Slice and serve immediately while the cheese is warm and gooey. Recommend serving with a cold beer or a crisp salad to balance the richness.
