Crack and season eggs
Crack the 6 large eggs into a medium mixing bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined, mixture is slightly frothy and uniform in color (about 20–30 seconds). Set aside.

Measure and shred 1 cup cheddar cheese and chop 2 tablespoons chives or green onions if using. If using raw sausage, cook it fully first and drain excess fat; if using deli ham, dice into small bite-sized pieces. Have 1 cup cooked meat ready.
Cook meat

Place a 10-12 inch nonstick skillet over medium heat. Add 1 tablespoon unsalted butter and, if desired, 1 teaspoon neutral oil (to raise smoke point). When butter is melted and foaming but not browned (about 30 seconds), add the cooked or diced meat. Sauté just until warmed through and edges begin to color, about 2–3 minutes. Spread meat into an even layer and reduce heat to medium-low.

Using a silicone spatula, scrape from the edges toward the center to form large, soft curds. Rotate the pan as you gently push and fold the eggs every 10–20 seconds. Keep heat at medium-low to avoid overcooking; total cooking time in the pan should be about 2–4 minutes depending on desired doneness.

When the eggs are mostly set but still slightly glossy and a little underdone (they will continue to cook from residual heat), sprinkle the 1 cup shredded cheddar evenly over the top. Gently fold the cheese into the eggs until melted and incorporated, about 30–60 seconds. Taste and adjust seasoning with a small pinch of additional salt or pepper if needed.
