Pancake batter

Choice of side (choose two pieces or fruit portion)

Method

Pancake batter

  1. 1

    Mix dry ingredients

In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

  2. 2

    Mix wet ingredients

In a separate bowl, whisk the milk, large egg, melted butter, and vanilla extract until smooth and combined.

  3. 3

Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy — do not overmix. Let the batter rest for 5 minutes to hydrate the flour and create a fluffy pancake.

Cook pancakes (Mickey shape)

  1. 4

Heat a nonstick griddle or skillet over medium heat (about 350°F / moderate). Lightly brush or spread 1 teaspoon of butter over the surface to prevent sticking.

  2. 5

To form a Mickey-shaped pancake: use a squeeze bottle, small ladle, or two spoons. First, pour about 1/3 cup of batter to form the large central 'head' circle (roughly 4 inches diameter). Immediately add two smaller rounds for 'ears' (about 1 to 1.5 inches each) touching the top of the head so they stick when cooked. Adjust sizes to keep proportions child-friendly.

  3. 6

Cook until bubbles form across the surface and edges look set, about 2 to 3 minutes. Carefully flip using a wide spatula and cook the second side for 1 to 2 minutes, until golden and cooked through. Repeat to make one pancake per serving (or multiple if serving more children). Keep cooked pancakes warm on a baking sheet in a low oven (200°F / 95°C) if making several.

Sides

  1. 7

Bacon option: In a skillet over medium heat, cook bacon strips 3–5 minutes per side until crispy. Drain on paper towels. Sausage option: In the same skillet (or a separate pan) cook sausage links, turning often, until browned and fully cooked through (internal temperature 160°F / 71°C), about 8–10 minutes. Fruit option: If choosing fresh fruit, rinse berries or slice banana and arrange 1 cup per serving; no cooking required.

Assembly and serving

  1. 8

Place the Mickey-shaped pancake on a plate. Add a dollop (about 2 tablespoons) of whipped cream in the center or on top of the pancake. Arrange the chosen side (two bacon strips, two sausage links, or 1 cup fresh fruit) neatly beside the pancake.

  2. 9

If desired, lightly drizzle up to 2 tablespoons maple syrup over the pancake or serve syrup on the side. Serve immediately while warm.
