Prepare & Marinate

    Trim and slice

    Pat the chicken breasts dry with paper towels. Trim any visible fat. Slice each breast into 1/2-inch to 3/4-inch wide strips (about 6–8 strips per breast depending on size) so pieces are uniform in thickness for even cooking.

    Make marinade

    In a medium bowl, whisk together olive oil, lemon juice, honey, garlic powder, paprika, salt, and black pepper until combined.

    Add the chicken strips to the bowl and toss thoroughly so each strip is coated with the marinade. Cover and refrigerate for at least 15 minutes and up to 2 hours. For very quick prep, 15–20 minutes is sufficient for kids' portions.

Grill

    Preheat an outdoor grill to medium-high heat (about 400°F / 200°C) or heat a grill pan/skillet over medium-high heat on the stovetop. Lightly oil the grill grates or brush the grill pan with the cooking oil or spray with nonstick spray.

    Remove chicken from the marinade and let excess drip off. Place strips on the hot grill in a single layer without crowding (work in batches if needed).

    Grill the strips 2.5–3 minutes per side, flipping once, until nicely browned with light grill marks and the internal temperature reaches 165°F (74°C). Total cook time per batch should be about 5–6 minutes depending on thickness.

    Transfer cooked strips to a clean plate and let rest for 2–3 minutes to allow juices to redistribute. This keeps them tender for kids.

Finish & Serve

    If desired, sprinkle chopped parsley over the warm chicken strips and serve with lemon wedges on the side.

    Arrange strips on a plate with small bowls of kid-friendly dipping sauces (ketchup, ranch, BBQ, or honey mustard). Serve immediately while warm.

    Store leftover cooked chicken strips in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 350°F (175°C) oven for 8–10 minutes or in a skillet over medium heat until warmed through.
