Method

Prepare ingredients

  1. 1

Remove butter from the fridge and let it soften slightly if not already softened (5–10 minutes). This makes it easier to spread.

  2. 2

If using block cheddar, slice or grate enough to make an even layer (about 1 ounce). If using pre-sliced cheese, have one slice ready. If using optional tomato or deli meat, have them sliced and ready.

Assemble sandwich

  1. 3

Lay the two bread slices flat. On one slice place the cheddar (and optional American slice on top for extra melt). If using optional add-ins, layer them over the cheese (tomato or deli meat). Top with the second slice of bread.

  2. 4

In a small bowl, mix the softened butter with the optional olive oil and a pinch of salt. Stir until evenly combined to create a spreadable mixture.

  3. 5

Spread the butter mixture evenly on the outside face of both slices of bread. This will be the exterior that contacts the pan and becomes crispy and golden.

Cook sandwich

  1. 6

Heat a nonstick skillet or frying pan over medium-low to medium heat. Let it warm for about 1–2 minutes. Using moderate heat helps the cheese melt fully without burning the bread.

  2. 7

Place the assembled sandwich in the preheated pan, buttered-side down. Press gently with a spatula to ensure even contact.

  3. 8

Cook for 2–3 minutes, checking the underside after 2 minutes. When it is golden brown, flip the sandwich carefully.

  4. 9

After flipping, cook the other side for another 2–3 minutes, pressing gently and adjusting heat down a touch if the bread is browning too fast. Total cook time should be about 4–6 minutes depending on heat and thickness.

  5. 10

If after 4–6 minutes the bread is golden but the cheese hasn't fully melted, cover the pan with a lid for 30–60 seconds to trap heat and finish melting the cheese, then remove the lid and cook an additional 15–30 seconds to crisp the bread if needed.

Serve

  1. 11

Transfer the grilled cheese to a cutting board. Let it rest for 30 seconds to 1 minute so the cheese sets slightly and is safer for kids to eat.

  2. 12

Cut the sandwich in half diagonally or into strips for little hands. Serve warm. Optional: pair with ketchup, apple slices, or a small cup of tomato soup for dipping.
