Prepare cheese mixture
In a medium bowl combine the shredded cheddar and Monterey Jack cheeses. If using, add the softened cream cheese and stir until well combined and slightly creamy. Season with 1/4 tsp salt and 1/8 tsp black pepper. Set aside.

Assemble first quesadilla
Lay one flour tortilla flat on a plate or cutting board. Spread about half of the cheese mixture evenly over the tortilla, leaving a 1/2-inch border around the edge so the cheese won't spill out when melting. Top with a second tortilla to form a sandwich.

Cook first side
Add 1/2 tablespoon of butter to the warmed skillet and let it melt and foam, coating the pan. Carefully transfer the assembled quesadilla to the skillet. Cook for 2 to 3 minutes, pressing gently with a spatula or a heavy spatula to ensure even contact and melting. Watch the underside; it should turn light golden brown, not burn.

Flip and finish
Using a wide spatula, carefully flip the quesadilla. Add the remaining 1/2 tablespoon butter around the edge of the tortilla if needed. Cook the second side for 1.5 to 2 minutes until golden brown and the cheese is fully melted. If the cheese needs more time to melt without further browning, reduce heat to low and cover the pan for 30–45 seconds, then uncover.

Rest and slice
Transfer the cooked quesadilla to a cutting board. Let it rest for 1 minute (this helps the melted cheese settle). Using a sharp knife or a pizza cutter, cut into 4 wedges. Repeat assembly and cooking steps with the remaining tortillas and cheese mixture to make the second quesadilla.

Keep warm (optional)
If making both quesadillas at once, keep the finished one warm on a baking sheet in a 200°F (95°C) oven while you cook the second, so both are served hot.

Arrange quesadilla wedges on a plate. Serve with small bowls of sour cream, mild salsa, and avocado or guacamole for dipping. For kids, place dips in separate small ramekins to make eating easy and fun.
