    Prepare meat

    If using breakfast sausage links: cook according to package instructions (pan-fry over medium heat 8–10 minutes until internal temperature reaches 160°F / 71°C), then slice each link into 4 bite-sized pieces. If using bacon: cook strips in a skillet over medium heat 6–8 minutes until crisp, drain on paper towels and break into bite-sized pieces. Keep warm.

    Crisp the hash browns

    Heat 1 tablespoon vegetable oil in a nonstick or cast-iron skillet over medium-high heat. Add the thawed shredded hash browns in an even layer. Press lightly with a spatula and cook undisturbed for 3–4 minutes until the underside is golden brown. Flip in sections and cook another 2–3 minutes until crisp and cooked through. Season with a pinch of salt. Transfer to a plate and keep warm.

    Scramble the eggs

    Crack the 4 eggs into a bowl, add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until blended and slightly frothy. Melt 1 tablespoon unsalted butter in a medium nonstick skillet over low–medium heat. Pour the egg mixture into the skillet. Let sit undisturbed 10–15 seconds, then gently push cooked edges toward the center with a spatula, tilting the pan to let uncooked egg flow underneath. Continue folding slowly until eggs are mostly set but still moist, about 2–3 minutes. Remove from heat; eggs will finish setting off the heat.

    Assemble and melt cheese

    Lay a large tortilla on a clean surface. If desired, lightly spread 1 teaspoon softened butter on the tortilla to add flavor and help soften when warmed. Place about 1/4 cup crisp hash browns in the center of the tortilla, add 1/4 of the scrambled eggs, distribute 1/4 cup shredded cheddar over the eggs, and arrange 1 cooked sausage (sliced) or 1 bacon strip (broken into pieces) on top. Fold the sides inward, then roll from the bottom to form a burrito. Repeat with remaining tortillas and fillings. To melt the cheese and seal burritos, place assembled burritos seam-side down in a clean skillet over low heat for 1–2 minutes per side until warmed through and cheese is melted. Alternatively, wrap in foil and heat in a 350°F (175°C) oven 8–10 minutes.

    Serve

    Slice burritos in half if desired. Serve warm with salsa or ketchup on the side for dipping. Refrigerate any leftovers in an airtight container for up to 3 days; reheat in a skillet or microwave until hot.
