Method

    Heat a large skillet (preferably cast-iron or heavy-bottomed) over medium-high heat. Add 1 tbs vegetable oil and let it warm until shimmering (about 30 seconds).

    Add the 4 hot link sausages in a single layer. Cook undisturbed for 2–3 minutes to develop a brown crust, then reduce heat to medium and continue cooking, turning every 2–3 minutes so each side browns evenly. Total cook time about 8–10 minutes, until internal temperature reaches 160°F (71°C) for pork/beef links or according to package instructions.

    If links are browning too quickly, lower heat to medium-low and cover the pan for 1–2 minutes to finish cooking through. Transfer cooked sausages to a plate and tent loosely with foil to keep warm while you cook the eggs.

    For Fried or Sunny-Side Up Eggs

    Reduce heat to medium-low and add 1 tbs unsalted butter to the same skillet. When butter foams, crack eggs gently into the pan, spacing them apart. Season with a pinch of salt and a few grinds of black pepper. For sunny-side up, cook uncovered for 2–3 minutes until whites are set but yolks are runny. For over-easy, cook 2 minutes then carefully flip and cook 20–30 seconds more.

    For Scrambled Eggs

    Crack all 4 eggs into a bowl, add 1/4 tsp salt and a pinch of black pepper, and whisk until combined and slightly frothy. Melt 1 tbs unsalted butter in the skillet over medium-low heat, pour in eggs and let them sit undisturbed for 10–15 seconds. Using a spatula, gently pull set edges toward center, tilting pan to allow uncooked egg to flow out. Continue folding until soft curds form and eggs are just set but still moist, about 1–2 minutes.

    For Poached Eggs (stovetop)

    Bring 3–4 inches of water to a gentle simmer in a saucepan and stir in 1 tsp vinegar (optional). Reduce to a bare simmer. Crack each egg into a small cup and gently slide into water. Poach for 3–4 minutes for runny yolks, then remove with a slotted spoon and drain on paper towel. Season with salt and pepper.

    Transfer eggs to the plate with hot links. If using sunny-side, you can spoon a little pan oil/butter over the yolks for gloss and warmth. Garnish with chopped parsley and serve with toasted bread or tortillas and hot sauce if desired.

Plating & Serving

    Arrange 2 hot link sausages and 2 eggs per plate (adjust proportionally for more servings). Slice links on the diagonal or leave whole. Add toast or tortillas to the side and pass hot sauce at the table.
