Method

Prep Vegetables

    Peel and finely dice the yellow onion until you have about 1/2 cup.

    Core, seed, and finely dice the bell pepper to yield about 1/2 cup.

    Clean mushrooms with a damp towel, trim stems, and slice thinly to make 1/2 cup.

    Dice the ripe tomato and remove excess seeds so it measures about 1/2 cup; pat slightly dry on paper towel to avoid excess moisture.

    If using, finely chop chives or parsley and set aside (about 1 tablespoon).

Cook Vegetables

    Heat a nonstick skillet over medium heat and add 1 tablespoon butter or oil. Let it shimmer but not brown.

    Add the diced onion and sauté 2–3 minutes until softened and translucent.

    Add bell pepper and sliced mushrooms; cook 3–4 minutes, stirring occasionally, until peppers soften and mushrooms release and reabsorb moisture. Season lightly with a pinch of salt and pepper.

    Stir in the diced tomato and cook 1 minute just to warm and combine. Transfer the cooked vegetables to a small bowl and wipe the skillet clean with a paper towel.

Make Egg Base

    Crack 3 large eggs into a bowl, add 2 tablespoons milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

    Whisk vigorously until the mixture is homogenous and slightly frothy (about 20–30 seconds). This creates a fluffy omelette.

Cook Omelette

    Return the cleaned skillet to medium-low heat and add the remaining 1/2 tablespoon butter or a light coating of oil; swirl to coat the pan evenly.

    Pour the beaten eggs into the skillet and let them sit undisturbed for 10–15 seconds until the edges begin to set.

    Using a spatula, gently push the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges; repeat around the pan until the eggs are mostly set but still slightly runny on top (about 1–1.5 minutes total).

    Spread the cooked vegetable mixture evenly over one half of the omelette. Sprinkle 1/2 cup shredded cheese over the vegetables and sprinkle chopped chives or parsley on top if using.

    Carefully fold the empty half of the omelette over the filled half using a spatula. Let cook 30–45 seconds more to melt the cheese and finish setting the eggs (cover pan briefly with a lid for faster melting if desired).

    Slide the omelette onto a warm plate and season lightly with extra black pepper or a pinch of salt to taste.

Serve

    Cut in half or serve whole. Garnish with additional chopped chives or parsley if desired. Serve immediately while hot.
