    If you prefer warm cookies, preheat oven to 325°F (160°C). Arrange 6 cookies on a baking sheet and warm for 5–7 minutes until just heated through and slightly soft in the center. Remove and let cool 1–2 minutes so they are warm but won't melt the ice cream immediately.

    If using store-bought fudge or caramel that is thick, gently warm the hot fudge and caramel in a small saucepan over low heat or in 15–20 second intervals in the microwave until pourable. Stir in up to 2 tablespoons brewed espresso or coffee into the hot fudge if you want a deeper flavor and smoother texture.

    Toast pecans in a dry skillet over medium heat, shaking the pan often, until fragrant and lightly browned, about 3–4 minutes. Remove from heat and chop coarsely. Allow to cool.

Assemble Sundaes

    Break 2 of the warmed cookies into large rough chunks and divide between two chilled 12-ounce dessert bowls or sundae glasses as the base layer (3 cookies per sundae total will be used as layers; remaining 3 used for garnish and texture).

    Spoon 1 cup (about 2 scoops) of vanilla ice cream over the cookie pieces in each bowl, pressing lightly so the ice cream nests among the cookie chunks.

    Drizzle 2 tablespoons hot fudge and 1 tablespoon caramel sauce over the ice cream in each sundae, letting some sauce drip into the cookie layer for gooey pockets.
