Method
Choice of Meat (cook first)
- 1
Bacon - pan-fried (crispy)
Place a cold nonstick or cast-iron skillet over medium heat. Arrange 3 bacon slices in a single layer. Cook, flipping every 2-3 minutes, until deep golden and crisp, about 8-10 minutes depending on thickness. Transfer to a paper towel–lined plate to drain. Reserve 1 teaspoon of bacon fat in the pan for eggs if desired.
- 2
Pork sausage links - pan-fried
Heat a tablespoon of neutral oil (or use skillet with bacon fat) over medium heat. Add 2 pork sausage links and cook, turning frequently so they brown evenly, until internal temperature reaches 160°F (71°C) and exterior is nicely browned, about 10-12 minutes. Transfer to a plate and tent with foil to keep warm.
- 3
Turkey sausage links - pan-fried
Heat 1 tablespoon oil in a skillet over medium heat. Add 2 turkey sausage links and cook, turning often, until browned and cooked through to 165°F (74°C), about 10-12 minutes. Transfer to a plate and tent with foil to keep warm.

General prep
Choose cooking style: fried (sunny-side up or over-easy), scrambled, or omelet. Crack 3 eggs into a bowl if scrambling or making an omelet; add 1 tablespoon water or milk if desired and season with 1/4 teaspoon salt and a pinch of pepper. For fried eggs, crack eggs directly into a small bowl for easy transfer.

Fried eggs (sunny-side up or over-easy)
Heat 1 tablespoon butter (or reserved bacon fat if used) in a nonstick skillet over medium-low. When butter is melted and foamy, gently slide eggs into the pan spaced apart. For sunny-side up: cook until whites are set but yolks remain runny, about 3-4 minutes. For over-easy: once whites are mostly set (about 2-3 minutes), carefully flip each egg with a spatula and cook 20-30 seconds more for runny yolk. Season with salt and pepper and transfer to plate.

Scrambled eggs
Heat 1 tablespoon butter in a nonstick skillet over medium-low. Pour in the beaten eggs. Let sit undisturbed 10-15 seconds until edges begin to set, then gently push set edges toward center with a spatula, allowing uncooked egg to flow underneath. Continue folding every 10-15 seconds until softly set and slightly creamy, about 2-3 minutes total. Remove from heat just before fully firming (residual heat will finish them). Season with salt and pepper and transfer to plate.

Omelet
Heat 1 tablespoon butter in a nonstick skillet over medium-low. Pour in beaten eggs and tilt pan to coat evenly. As edges set, lift them with a spatula to let uncooked egg run underneath. When top is nearly set but still slightly moist, add any desired fillings (not included in base recipe). Fold the omelet in half and slide onto plate. Season with salt and pepper.
