Method
Prepare Filling

Heat pan and sweat vegetables
Place a 10-inch nonstick or well-seasoned skillet over medium heat. Add 1 tablespoon butter and 1 teaspoon oil. When butter foams, add diced onion and both diced bell peppers. Cook, stirring occasionally, until vegetables are softened and edges are translucent, about 4–5 minutes.

Add ham and season
Add the diced ham to the skillet with the vegetables and cook until ham is warmed and lightly browned around the edges, about 2–3 minutes. Season the mixture with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer the filling to a bowl and wipe the skillet clean with a paper towel; keep skillet warm over low heat.
Make Egg Mixture

Crack 4 large eggs into a mixing bowl. Add 2 tablespoons milk (or water), 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk vigorously until the mixture is uniformly yellow and slightly frothy, about 30–45 seconds. This introduces air for a fluffy omelette.

Heat skillet
Return the skillet to medium-low heat and add the remaining 1/2 tablespoon butter. Swirl to coat the pan and melt butter fully, watching that it does not brown.

Pour eggs and create curds
Pour the beaten eggs into the skillet, tilting the pan to spread them evenly. Let the eggs set undisturbed for about 20 seconds, then use a silicone spatula to gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat for about 30–60 seconds until the eggs are mostly set but still slightly glossy on top.

Fold and finish
Use the spatula to gently fold the empty half of the omelette over the filled half. Tilt the pan and slide the omelette onto a plate, fold-side down if you prefer a neat finish. Let rest for 30 seconds on the plate so residual heat completes the cooking and cheese melts fully.

Sprinkle the top with sliced chives or green onions. Serve immediately with optional hot sauce, ketchup, toast, or hash browns as desired.
