Prepare ingredients

    Measure and prep

    Measure out sour cream and shredded cheese. Chop chives finely and set aside. If using tomato or pico de gallo for garnish, slice or portion now.

    Halve the avocado, remove pit, scoop flesh into a small bowl. Add lime juice, a pinch of salt and pepper, and mash lightly with a fork so avocado is still slightly chunky. Reserve slices for topping if you prefer sliced avocado rather than mashed.

Make egg mixture

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds). This aeration helps produce a fluffy omelette.

Cook omelette

    Place a nonstick 8–10 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Do not let the butter brown; adjust heat so it sizzles gently.

    Pour the whisked eggs into the skillet. Let them sit undisturbed for about 10–15 seconds until edges begin to set.

    Using a heatproof spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat around the pan until most of the egg is set but the top still looks slightly moist (about 45–60 seconds total cooking time). Keep the heat moderate to avoid over-browning.

Assemble filling and finish

    Spread the 3 tablespoons of sour cream in a thin line across one third of the omelette surface (the half closest to you). If you reserved mashed avocado, dollop 1–2 tablespoons of the mashed avocado on top of the sour cream line; if you prefer slices, arrange sliced avocado on top instead.

    Sprinkle 3 tablespoons shredded Monterey Jack cheese evenly over the sour cream/avocado area. Add 1 teaspoon chopped chives on top of the filling.

    Tilt the pan away from you and use the spatula to fold the omelette over the filling so it forms a semi-circle. Gently press down and let it cook for another 20–30 seconds to allow the cheese to melt. If cheese isn’t fully melted, cover the pan briefly (10–15 seconds) with a lid off-heat or move the skillet off the burner and cover.

Plate and garnish

    Slide the finished omelette onto a plate seam-side down. Top with reserved avocado slices (if you mashed earlier, add a small spoonful on top) and a sprinkle of extra chives. Add sliced tomato or a spoonful of pico de gallo to the side if using.

    Serve immediately while hot. Optional: season lightly with additional salt and pepper to taste.
