Beef Patties

Prepare Patties

    Combine and season

    Place the ground beef in a medium bowl. Add kosher salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Gently mix with your hands or a spatula until just combined; avoid overworking to keep patties tender.

    Form patties

    Divide the mixture into 2 equal portions (about 8 oz each). Shape each portion into a round patty about 3/4-inch thick and slightly wider than your bun (they'll shrink as they cook). Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Cook Patties

    Heat a large skillet or grill over medium-high heat. Add vegetable oil and swirl to coat. When the pan is shimmering (or grill is hot), add the patties. Cook undisturbed for 3-4 minutes to develop a good sear.

    Flip the patties and continue to cook for another 3-4 minutes for medium (internal temperature about 160°F / 71°C for well-done as ground beef should be fully cooked). If using cheese, place a slice on each patty in the final minute and cover the pan or close the grill to melt.

    Transfer cooked patties to a plate and let rest for 3 minutes while you cook the eggs. If serving on buns, toast them briefly in the same pan or on the grill until golden.

Cook Eggs

    Wipe the skillet clean if needed and reduce heat to medium-low. Add unsalted butter and let it melt, swirling to coat the pan.

    Crack the eggs into the pan (cook in batches if your pan is small). Season each egg with a pinch of salt and pepper. For sunny-side-up: cook gently for 2.5–4 minutes until whites are set but yolks remain runny. For over-easy: cook 2–3 minutes until whites set, carefully flip each egg, and cook 15–30 seconds more. For over-medium: 45–60 seconds after flipping. Adjust times slightly to your preferred yolk doneness.

    Remove eggs from the pan and keep warm on the plate with the patties.

Assemble and Serve

    If using buns or toast, spread ketchup or hot sauce on the bottom bun or bread. Place lettuce and tomato if using.

    Put the rested beef patty on the bun or plate, top with the cooked egg (or two eggs if plating family-style). Add any remaining toppings, close the bun, or serve open-faced.

    Serve immediately while warm. Suggested accompaniments: breakfast potatoes, a simple salad, or fruit.
