Prep vegetables and ham
Dice the onion and bell pepper into small, even pieces (about 1/4 inch). Dice the cooked ham into similar-sized small cubes so they warm evenly.

Crack the eggs into a medium bowl, add the milk, salt, and pepper. Whisk vigorously until blended and slightly frothy.

Sauté the vegetables, stirring occasionally, until they soften and the edges become translucent and lightly golden, about 4–5 minutes.

Let the eggs sit, undisturbed, for about 15–20 seconds until the edges just begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center in sweeping motions, creating soft curds. Continue folding every 10–15 seconds; don’t over-stir—aim for soft, slightly glossy curds.

Taste and adjust seasoning with a pinch more salt and pepper if desired.
