Remove eggs from the refrigerator 5–10 minutes before cooking to take the chill off. Prepare chosen side (grits, hash browns, or biscuit) while eggs cook so everything is hot and ready.

Cook grits
Bring 2 cups cold water and 0.5 tsp salt to a boil in a medium saucepan. Gradually whisk in 0.5 cup stone-ground grits to prevent lumps. Reduce heat to low, cover partially, and simmer gently, stirring occasionally, for 15–20 minutes until thick and tender (follow package instructions for quick grits if using). Stir in 1 tbsp butter and 2 tbsp milk if using, adjust seasoning, and keep warm over the lowest heat, stirring occasionally.
Hash Browns

Prepare potatoes
Peel and grate 1 russet potato. Place grated potato in a clean kitchen towel or paper towels and squeeze out as much moisture as possible (this improves browning).

Pan-fry hash browns
Heat a nonstick or cast-iron skillet over medium-high heat. Add 2 tbsp vegetable oil and let it shimmer. Spread the grated potato in an even layer and press down with a spatula. Season with 1/2 tsp salt and 1/8 tsp pepper. Cook undisturbed for 4–6 minutes until the bottom is deeply golden and crisp. Flip in sections or use a spatula to turn; cook another 3–4 minutes until cooked through and crisp. Stir in 1/2 tbsp butter if desired for extra flavor. Keep warm while preparing eggs.
Buttermilk Biscuit (single quick biscuit)

Make dough
Preheat oven to 425°F (220°C) or heat a small skillet if you prefer stovetop. In a small bowl, whisk 3/4 cup flour, 1 tsp baking powder, and 1/4 tsp salt. Cut in 1 tbsp cold cubed butter with a pastry cutter or two forks until mixture resembles coarse crumbs. Stir in 3 tbsp cold buttermilk until just combined—do not overmix.

Bake or cook
Drop the dough onto a small baking sheet or into a preheated greased 4–5 inch oven-safe skillet. Bake for 10–12 minutes until risen and golden. If using stovetop, cook the dropped biscuit in a covered skillet over medium-low heat for about 8–10 minutes, flipping once, until cooked through. Serve warm.

Heat a nonstick skillet over medium-low heat and add 1 tbsp butter. When butter is melted and foaming but not browning, pour in eggs. Let eggs sit without stirring for 10–15 seconds until edges begin to set. Gently push the eggs from the edges toward the center with a silicone spatula, creating soft curds. Continue folding every 10–15 seconds until eggs are mostly set but still slightly glossy—remove from heat (they will finish setting off the heat). Sprinkle chopped chives if using and adjust seasoning to taste.

Heat a nonstick skillet over medium heat and add 1 tsp neutral oil and 1/2 tbsp butter (optional) until the fat shimmers. Crack each egg gently into a small bowl and then slide into the pan to avoid breaking yolks. For fried eggs (over-easy/medium/hard): cook until whites are set, then flip carefully and cook 15–30 seconds for over-easy, 30–60 seconds for over-medium, or 1–2 minutes for over-hard. For sunny-side-up: cook without flipping until whites are fully set but yolks remain runny, about 2–3 minutes. Season with salt and pepper to taste.
Plating and serving

Arrange the three eggs (prepared as chosen) on a plate alongside your selected side: a generous scoop of grits, a portion of crispy hash browns, or a warm buttermilk biscuit. Add additional butter to grits or biscuit if desired, and offer hot sauce at the table. Taste and adjust salt and pepper.
