Chicken & Marinade
Marinate Chicken
Pat chicken thighs dry with paper towels. In a bowl combine 2 tbs olive oil, 2 tsp minced garlic, 1 tbs chopped thyme, 1.5 tsp salt and 1 tsp black pepper. Rub mixture evenly under the skin and over the chicken pieces. Let rest at room temperature for 20–30 minutes or refrigerate up to 2 hours. If refrigerated, bring to room temperature 30 minutes before cooking.
Wood-Fire Cook or Oven Roast
Preheat a wood-fired grill to medium-high (about 425–475°F) with coals pushed to one side for indirect heat. If using an oven, preheat to 425°F and use a roasting rack. Sear chicken skin-side down over direct heat for 4–5 minutes until deeply browned and crisp, then move to indirect heat (or place on rack in oven). Continue cooking until an instant-read thermometer inserted into the thickest part reads 165°F, about 18–25 minutes total depending on size. Let rest 5 minutes before serving.
Bourbon Cream Sauce
Add 3 tbs chicken stock and simmer 1–2 minutes. Stir in 3 tbs heavy cream and 1 tsp Dijon mustard. Simmer gently until sauce coats the back of a spoon, about 2–3 minutes. Season with 0.5 tsp salt, 0.25 tsp black pepper and 1 tsp chopped parsley. Keep warm and spoon over chicken when serving.
Spinach & Mushrooms
In a large skillet over medium-high heat, heat 1 tbs olive oil and 1 tbs butter until shimmering. Add the sliced mushrooms (8 oz) in a single layer and let brown undisturbed for 2–3 minutes, then stir and cook another 2–3 minutes until golden and any liquid has evaporated.
