Combine equal parts honey and hot water (e.g., 1/4 cup honey + 1/4 cup hot water). Stir until fully dissolved and cool to room temperature. (Use 0.5 oz for one cocktail; reserve remainder for additional servings.)

Chill a highball or Collins glass in the freezer for 5–10 minutes, or fill with ice while assembling to cool. Juice the orange, lemon, and grapefruit fresh. Measure spirits and liqueurs.

Build (shake)

Add 1 cup fresh orange juice, 2 tablespoons fresh lemon juice, and 2 tablespoons grapefruit juice to a cocktail shaker. This bright citrus base provides the 'sunny' foundation.

Pour in 2 oz light rum, 1 oz Aperol, and 0.5 oz Cointreau. The rum gives body, Aperol lends a gentle bitter-sweet orange character, and Cointreau heightens orange aromatics.
