Sponge Cake
Preheat and prepare pan
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan lightly with butter or nonstick spray and line the bottom with parchment paper for easy removal, or simply grease thoroughly.
Combine dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1 tsp baking powder, and 1/2 tsp fine sea salt until evenly distributed. Set aside.
Beat eggs and sugar
In a large mixing bowl (or stand mixer bowl), add 5 large eggs and 1 cup granulated sugar. Using the whisk attachment or an electric mixer, beat on high speed for about 6–8 minutes until the mixture is thick, pale, and ribbon-like when the whisk is lifted. The volume should increase significantly.
Fold in dry ingredients and flavor
Gently fold the sifted dry ingredients into the egg-sugar mixture in two additions using a rubber spatula. Fold gently to retain as much air as possible. Fold in 1 tsp vanilla extract and 2 tbsp melted cooled unsalted butter until just incorporated. Do not overmix.
Bake
Pour the batter into the prepared 9x13 pan, smoothing the top gently. Bake in the preheated oven for 20–25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean. The cake should spring back slightly when touched.

Prepare milk mixture
In a measuring cup or medium bowl, whisk together 1 cup whole milk, 1 cup evaporated milk, and 1 cup sweetened condensed milk until smooth and homogeneous.
Pour milk mixture over cake
Slowly pour the milk mixture evenly over the warm cake, starting at one side and moving across to ensure even absorption. Pour in a steady stream and allow the liquid to soak in for 10–15 minutes. If there is excess on the surface, gently tilt the pan to distribute; a small pool is fine — it will be absorbed.
Whipped Topping
Chill equipment
Place the mixing bowl and whisk or beaters in the refrigerator for 10 minutes (optional but helps whipping). Ensure heavy cream is well chilled.
Whip cream
In the chilled bowl, pour 1.5 cups chilled heavy cream, add 3 tbsp powdered sugar and 1 tsp vanilla extract. Whip on medium-high speed until soft to medium peaks form — the cream should hold shape but still be spreadable. Do not overbeat to butter.
Spread over chilled cake
Remove the chilled tres leches cake from the refrigerator. Using a spatula or offset knife, spread the whipped cream evenly over the top of the soaked cake. Keep strokes light to maintain a smooth surface.
Garnish (optional)
Lightly dust the top of the whipped cream with 1/2 tsp ground cinnamon. Sprinkle 2 tbsp toasted coconut flakes and scatter 1/2 cup fresh berries across the surface or place them decoratively along one side. For cleaner slices, refrigerate another 15–30 minutes after garnishing before serving.
