Salmon
Prep the fish
Pat salmon fillets very dry with paper towels. Check for any pin bones and remove with pliers if present. Bring fillets to room temperature for 15–20 minutes before cooking to ensure even cooking.
Season
Season the flesh side of each fillet evenly with about 3/4 tsp sea salt and a pinch of black pepper (total 1 1/2 tsp salt and 1 tsp pepper divided across fillets). Lightly rub lemon zest over the top of each fillet.
Sear
Heat a large heavy skillet (preferably stainless steel or cast iron) over medium-high heat until hot. Add 1 tablespoon olive oil and 1 tablespoon butter and swirl to coat. Place salmon fillets skin-side down in the pan, spacing them so they do not touch. Press gently with a spatula for 10 seconds to prevent curling. Cook skin-side down, undisturbed, for 4–6 minutes depending on thickness, until the skin is crisp and the fish is cooked about two-thirds of the way up the side.
Finish in pan
Flip the fillets carefully and add another tablespoon butter to the pan. Spoon the melted butter over the tops (basting) while cooking for an additional 1–2 minutes for medium-rare to medium (an internal temp of about 125–130°F / 52–55°C). For well-done, cook 2–3 minutes. Remove fillets to a warm plate and tent loosely with foil while you make the sauce.
Pan sauce / finish
Sweat aromatics
With the pan still over medium heat (do not fully cool), add the minced shallot. If pan looks dry, add the remaining 1 tablespoon butter. Cook shallot 1–2 minutes until softened and translucent but not browned. Add minced garlic and cook 30 seconds until fragrant.
Deglaze
Pour in 1/4 cup dry white wine (or stock) and use a wooden spoon to scrape up any browned bits from the bottom of the pan (these add flavor). Let the liquid reduce by about half, 1–2 minutes.
Finish sauce
Reduce heat to low and whisk in the remaining 1 tablespoon butter until the sauce is glossy. Stir in lemon juice, capers, chopped parsley, and optional dill. Taste and adjust seasoning with salt and freshly ground black pepper. If the sauce is too sharp, add a small pinch of sugar or an extra pat of butter to round it out.
Dress the fish
Return the salmon to the pan briefly (skin-side up) or spoon the sauce over each fillet. Let the fillets rest in the warm sauce for 30–60 seconds to re-warm and absorb flavor.
Serve
Plate each salmon fillet skin-side down and spoon pan sauce and capers over the top. Garnish with lemon wedges and microgreens or extra parsley. Serve immediately.
