Prepare the Ingredients

Gather all ingredients and prepare them by chopping the bell pepper, shredding the carrot, and slicing the green onion.

Cook the Eggs

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set. Flip and cook for an additional minute for over-easy eggs. Remove from skillet and set aside.

Sauté the Vegetables

In the same skillet, add the remaining tablespoon of vegetable oil. Add the bell pepper and carrot, sautéing for about 3-4 minutes until they are tender.

Add the Rice

Add the cooked rice to the skillet with the vegetables. Pour in the soy sauce and stir well to combine. Cook for an additional 2-3 minutes, allowing the rice to heat through and absorb the flavors.

Serve

Slice the cooked eggs and place them on top of the fried rice. Garnish with sliced green onion and serve immediately.
