Prepare the Chicken
Season the chicken breasts with salt and pepper. Grill or pan-sear the chicken over medium heat for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest before slicing.
Sauté the Vegetables
In a large skillet, add a little oil and sauté the bell pepper, carrot, and napa cabbage over medium heat until tender, about 5-7 minutes.
Combine Ingredients
In a large bowl, combine the cooked egg noodles, sautéed vegetables, and sliced chicken. Add the sesame-ginger vinaigrette and toss everything together until well coated.
Serve
Plate the chicken chop, and sprinkle with cashews for added crunch. Enjoy!
