In a large mash tun, combine 5 gallons of filtered water and 6 cups of pale malt. Heat the water to 155°F (68°C) and maintain this temperature for 60 minutes.

Prepare the Mash

After the initial mash, add 1 cup of caramel malt to the mash tun and stir well. Let it rest for an additional 10 minutes.

After mashing, sparge the grains with hot water to collect 6 gallons of wort.

Sparging

Bring the wort to a boil in a large kettle. Once boiling, add 1 oz of Hallertau hops and boil for 60 minutes.

In the last 10 minutes of the boil, add 0.5 oz of Saaz hops.

After boiling, cool the wort quickly using a wort chiller until it reaches 68°F (20°C).

Transfer the cooled wort to a sanitized fermentation vessel and pitch 1 packet of lager yeast. Seal the vessel and let it ferment at 50°F (10°C) for 2 weeks.

Fermentation

After fermentation is complete, prepare bottles and caps. Sanitize them thoroughly.

Prepare for Bottling

Transfer the beer into the bottles, leaving about an inch of headspace. Cap the bottles and store them at room temperature for another 1-2 weeks to carbonate.
