Heat 6 gallons of filtered water to approximately 165°F (74°C).

Add the crushed grains (Pale Malt, Caramel Malt, and Carapils) to the hot water and maintain the temperature at around 152°F (67°C) for 60 minutes.

After mashing, sparge the grains with enough hot water to collect around 6 gallons of wort.

Bring to Boil

At the start of the boil, add 1 oz of Centennial hops. After 30 minutes, add 1 oz of Citra hops, 0.5 oz of Simcoe hops, and 0.5 oz of Amarillo hops. Finally, after 60 minutes, add 1 oz of Cascade hops.

Cool the wort quickly using a wort chiller to around 70°F (21°C).

Transfer the cooled wort to a fermenter and pitch 1 pack of American Ale yeast.

Seal the fermenter and let it ferment for 1-2 weeks at around 68-72°F (20-22°C) until fermentation is complete.

Dissolve 3 oz of corn sugar in 2 cups of boiling water and let it cool.

Prepare Priming Sugar

Add the priming sugar solution to the beer and bottle it in sanitized bottles. Cap the bottles.

Let the bottles carbonate at room temperature for 1-2 weeks.
