In a large brew kettle, heat 5 liters of filtered water to approximately 70°C (158°F). Once heated, add the pale malt and caramel malt, stirring well to ensure there are no clumps. Maintain the temperature for about 60 minutes, allowing the grains to release their sugars.

Mashing

After mashing, sparge the grains by pouring an additional 5 liters of hot water over the grain bed to extract more sugars. Collect the liquid, now called wort, in a separate kettle.

Sparging

Bring the wort to a boil. Once boiling, add Hallertau and Saaz hops. Boil for 60 minutes, stirring occasionally to prevent sticking and scorching.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cooling

Transfer the cooled wort into a sanitized fermenter, and pitch the lager yeast. Seal the fermenter with an airlock and store in a cool area (around 10-12°C or 50-54°F) for fermentation, which should take about 2-3 weeks.

Fermentation

Once fermentation is complete, bottle the beer using sanitized bottles and caps. Allow it to condition at room temperature for another 1-2 weeks.

Bottling

After conditioning, chill the bottles in the refrigerator. Serve the Famosa Guatemalan Lager cold, and enjoy the robust yet delicate flavor!
