ABV: 6.5% IBU: 40. Rauchbiers are made by drying malt over an open flame. This results in a big, toasty, smokey beer with tons of body.

Start by heating 15 liters of filtered water to around 75°C (167°F). Add the Pale Malt, Smoked Malt, Munich Malt, and Caramel Malt to the hot water in a mash tun.

Prepare the Mash

Allow the grains to steep in the water for about 60 minutes at a temperature of 65°C (149°F). Stir occasionally to ensure even temperature.

Mash Rest

After the mash rest, heat an additional 5 liters of water to 75°C (167°F). Sparge the grains with this water to collect wort in the brew kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add the Hallertau Hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Tettnang Hops to the wort.

Add Finishing Hops

After 60 minutes of boiling, cool the wort rapidly using a wort chiller until it reaches around 10°C (50°F).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the German Lager Yeast.

Pitch the Yeast

Seal the fermentation vessel and let it ferment at a consistent temperature of around 10°C (50°F) for 2 weeks.

Fermentation

After fermentation is complete, bottle the beer with priming sugar or transfer to a keg. Allow it to carbonate for another 1-2 weeks.

Once carbonated, chill the beer and serve it in a suitable glass to enjoy the smoky flavors of Aecht Shlenkerla Urbock Rauchbier.
