Prepare glass
Run a lime wedge around the rim of a rocks glass. Spread the smoked salt on a small plate and dip the wet rim into the smoked salt to coat. Set the glass aside.
Combine ingredients
In a cocktail shaker, add 2 oz mezcal, 0.5 oz reposado tequila, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.25 oz chile liqueur (or triple sec plus a dash of hot sauce), and 2 dashes of angostura bitters.
Shake
Add ice to the shaker (enough to fill). Seal and shake vigorously for 12–15 seconds until chilled and slightly diluted.
Strain and serve
Place a large ice cube (or 3–4 ice cubes) into the prepared rocks glass. Double-strain the cocktail into the glass over the ice to remove small ice shards and any muddled bits, if present. Express a lime wheel over the drink (squeeze to release oils) and drop it in as garnish.
Optional Smoke Finish
Smoke using wood chips and torch
Place a small handful (about 0.25 oz) of wood chips in a heatproof metal spoon or in the bottom of a cocktail smoker box positioned near the glass. Ignite the chips with a small hand torch until they begin to smolder and produce smoke. Immediately invert the rocks glass over the smoking chips or direct the smoke into the glass using the smoker box or a funnel. Trap the smoke by covering the glass for 20–30 seconds, then uncover and pour the prepared cocktail into the smoked glass to capture the aroma. Alternatively, light the chips, blow them out so they smolder, and hold the glass over the smoke path and then invert to capture the smoke.
Smoke using a smoking gun (alternative)
If you have a smoking gun, place the finished cocktail in the glass (without garnish), cover with a lid or coaster, insert the gun nozzle, and fill the glass with smoke. Let it sit for 20–30 seconds, then remove the nozzle and replace the garnish. This yields a cleaner, controllable smoke intensity.
