Prepare glass

Run the grapefruit wedge or lime wedge around the rim of a collins or highball glass to moisten. Spread the kosher or coarse salt on a small plate and dip the rim into the salt to create an even salted rim. Fill the glass about three-quarters full with ice and set aside.

Build the cocktail

In a cocktail shaker (or mixing glass) filled with a handful of ice, add 2 oz blanco tequila, 3 oz freshly squeezed grapefruit juice, 0.5 oz fresh lime juice, and 0.5 oz simple syrup or agave. Shake vigorously for about 10 seconds until well chilled.

Strain and top

Strain the shaken mixture into the prepared glass over the ice. Top with 2 oz club soda (or grapefruit soda if you prefer a sweeter, fizzier Paloma). Give the drink a gentle stir once to combine.

Garnish and serve

Garnish with a grapefruit wedge or slice and a lime wheel or wedge. Optionally squeeze the garnish over the drink for extra aroma. Serve immediately with a straw or stirrer.

Notes

Adjust sweetness by varying the simple syrup/agave between 0 to 0.75 oz. For a bigger batch, maintain the proportions: per serving = 2 oz tequila : 3 oz grapefruit juice : 0.5 oz lime : 0.5 oz syrup : 2 oz soda.
