Chill glass and prepare ice

Place an Old Fashioned glass in the freezer or fill with ice water to chill while you prepare the cocktail. If using a large ice cube, have it ready and fully frozen.

Combine ingredients

In a mixing glass or small shaker, add 0.5 oz demerara simple syrup, 3 dashes Angostura bitters and 1 dash orange bitters. Add 2 oz double-oaked bourbon.

Stir

Add a generous amount of ice to the mixing glass. Stir gently but thoroughly for 20–30 seconds (about 20–30 slow rotations) until the mixture is well chilled and slightly diluted — this rounds the spirit and integrates the syrup and bitters.

Prepare glass

Discard ice water from the chilled glass (if used). Place one large ice cube into the chilled Old Fashioned glass.

Strain

Strain the stirred cocktail over the large ice cube in the chilled glass using a julep strainer or fine mesh.

Garnish and express oils

Hold an orange peel over the drink with the outside skin facing down. Briskly squeeze the peel to express the oils over the surface of the cocktail, then rub the peel around the rim and drop it into the glass as garnish. Optionally add a maraschino cherry on a pick.

Smoke glass (optional)

If you want a smoky aromatic finish: light the tip of a cinnamon stick or a few wood chips on a heatproof surface until they smolder. Invert the chilled glass over the smoldering item for 5–10 seconds to capture smoke, then immediately place the large ice cube and pour/strain the cocktail into the smoked glass. Alternatively, hold the smoked cinnamon briefly over the finished drink to add aroma.
